With doors open from 7:00 a.m. to 7:00 p.m., Casa Colibris is designed to accompany the rhythm of the day. Mornings begin with bright breakfasts, specialty coffee, and beloved community favorites, while afternoons transition into a menu inspired by one of Mexico’s most cherished ingredients: corn.
Throughout the menu, guests will discover colorful heirloom varieties of corn featured in a range of traditional dishes, including handmade tortillas prepared with care and respect for their origins. The front bar serves as a lively gathering place where visitors can enjoy specialty coffee, aguas frescas, house-made treats, churros, ice cream, and other seasonal offerings in a warm and welcoming atmosphere.
